So, I used to buy this premade broccoli rice at Reasor’s, and it was great, but apparently, the manufacturer quit making it, so yours truly decided to make it on my own. LOL. Obviously, it’s not that hard. Anyway I love it for several reasons including it taste great and it freezes well.
Now it all depends on how much you want to make. I started with one medium broccoli head. I used my Pampered Chef Food Chopper. I cut the dark green florets off stems into smaller pieces then chopped away. It’s also kind of fun to use this kitchen tool. I feel like it’s kind of an arm and shoulder workout? No? Okay well, it’s fun anyway.
After you have it all chopped up, put it to the side. Cut up some white onion, jalapeno and grab some minced garlic. Place these veggies in a skillet with a little olive oil on medium heat occasionally stirring until they start to brown. Then, add your broccoli rice, stirring often and cook until it reaches the softness you like. I like to add some fresh cilantro, salt, and pepper and cook for about another minute.
Next, let it cool. Then I bag one to two cups in freezer-safe baggies and finally, I freeze it. For me, it’s very easy to then pull it out of the freezer and add to my dinner options in my lunch box, or dinner box.
